1 can (15 oz.) chickpeas

2 minced cloves of garlic

¼ c. of each:

● Sliced black olives

● Roasted red peppers – minced from a jar

1 ½ c. dry quinoa

1/3 c. olive oil

1 tbsp. red wine vinegar

½ t. of each – dried & crushed:

● Thyme

● Basil

● Salt

● Freshly cracked pepper

Optional:

● Cherry tomatoes

● Fresh basil

Also Needed: 4 Mason jars
